Fines Herbes

A blend of finely chopped parsley, chervil, chives and tarragon, used to flavor delicate dishes, such as omelette or green salad. Mixed into a little melted butter and lemon juice, fines herbes is frequently used on grilled fish or steak and in emulsified, butter-based sauces, such as bearnaise and hollandaise.
